What to Do With This Week’s Farm Box (Strawberries, Green Beans, + Zucchini)

Timing and farming have been very humbling lately.
You can plan everything out. Months ahead. Crop timing, harvest windows, what should be ready when. And then the weather does whatever it wants and suddenly you’re adjusting in real time.
This box feels like that in a good way though. A little bit of spring, a little bit of early summer, and just enough variety to keep things interesting without turning dinner into a full production.
What’s in This Week’s Box
Green beans
Green kale
Red radishes
Strawberries
Romaine lettuce
Green zucchini
A solid mix of crisp, fresh, and quick-cooking veg with a little sweetness built in.
How to Store It (So It Actually Lasts)
Green beans: Fridge, use within a few days for best texture
Kale: Fridge, loosely bagged. Holds well
Radishes: Fridge. Remove tops if attached
Strawberries: Fridge, but honestly just eat them
Romaine: Fridge, keep it crisp
Zucchini: Fridge. Use within a few days
The Recipe: Warm Green Bean + Zucchini Salad with Strawberries
This is one of those recipes that sounds a little unexpected but works. Warm veg, fresh crunch, a little sweetness. Balanced without trying too hard.
Ingredients:
1 lb green beans, trimmed
1 zucchini, sliced
1 bunch kale, stems removed and chopped
1 head romaine, chopped
1 bunch radishes, sliced thin
1 pint strawberries, halved
Olive oil
Salt + pepper
Simple dressing:
2 tbsp olive oil
1 tbsp vinegar or lemon juice
1 tsp honey
Salt + pepper
Instructions:
Blanch the green beans
Quick boil for 2–3 minutes, then rinse cold. Keeps them bright and crisp.
Cook the zucchini
Sauté or roast with olive oil and salt until just tender.
Quick sauté the kale
Lightly cook with a little olive oil until softened.
Build the base
Toss romaine and radishes together in a large bowl.
Assemble
Add warm green beans, zucchini, and kale. Top with strawberries and drizzle with dressing.
Let it sit for a few minutes so everything comes together.

Don’t overcook the beans. Crisp is better
