Memorial Day weekend always sneaks up on me a little. One minute it’s “spring,” and the next you’re digging camping gear out of the garage wondering why everything smells faintly like sunscreen and smoke.


This week’s box feels made for that. Crisp things, grillable things, vegetables that actually taste good enough to keep the meal simple.

No need to overdo it. Nature already handled the ambiance.


What’s in This Week’s Box

  • Golden beets

  • Grazion leaf lettuce

  • Red radishes

  • Green cabbage

  • Yellow onions

  • Fresh oregano

  • Green round summer squash

  • Yellow round summer squash

Basically everything you need for fresh, crunchy camp meals and one very solid grill situation.


How to Store It (Before You Pack It Into a Cooler)

  • Golden beets: Fridge. Remove tops if attached

  • Leaf lettuce: Fridge, loosely wrapped with a towel

  • Radishes: Fridge. Great cold snack material

  • Cabbage: Fridge. This thing was born for camping

  • Onions: Cool dark spot, not the fridge

  • Oregano: Fridge or counter in water

  • Summer squash: Fridge. Use within a few days


The Recipe: Campfire Veggie Packets + Crunchy Slaw

This is exactly the kind of camping food I want. Easy prep, minimal dishes, fresh flavors, and enough substance that everyone stops asking for snacks every 14 minutes.


For the veggie packets:

  • Round summer squash, sliced thick

  • Yellow onions, sliced

  • Olive oil

  • Fresh oregano

  • Salt + pepper

  • Optional: sausage or marinated chicken


Instructions:

  1. Toss squash and onions with olive oil, oregano, salt, and pepper.

  2. Wrap in foil packets.

  3. Throw on the grill or campfire grate until tender and slightly charred.

That’s it. Smoky, sweet, ridiculously good for almost no effort.


Quick Crunchy Slaw

Ingredients:

  • Green cabbage, shredded

  • Radishes, sliced thin

  • Small handful oregano

  • Olive oil

  • Lemon juice or vinegar

  • Salt


Instructions:

Mix everything together and let it sit while dinner cooks. Gets better as it hangs out.

Fresh, crunchy, bright. Exactly what you want next to grilled food.


Real-Life Camping Tips

  • Prep veggies before you leave if possible

  • Foil packets save dishes and sanity

  • Cabbage holds forever in a cooler and somehow gets better every day

  • Pack extra radishes for snacks around camp
