What to Do With This Week’s Farm Box (Yes, We’re Making Muffins)

Every once in a while, a farm box leans a little sweet.This is one of those weeks.

Between fresh strawberries and zucchini showing up together, it felt like a sign to make something that’s technically a snack but also somehow breakfast. Or dessert. Or both.

We’re going with muffins.


What’s in This Week’s Farm Box

This week’s box is fresh, green, and very spring turning into summer:

  • Arugula

  • Chard

  • Leaf lettuce

  • Strawberries

  • Scallions

  • Ball squash + zucchini (summer squash)


It’s a good balance of crisp greens, cooking greens, and just enough sweetness to keep things interesting.


The Muffins We Can’t Stop Thinking About

We’re not reinventing the wheel here. Just pointing you toward a recipe that works and letting good ingredients do their thing.


These chocolate chip zucchini strawberry muffins are soft, just sweet enough, and come together fast. The zucchini keeps them moist without tasting like vegetables, and the strawberries bring that early summer energy. Add chocolate chips and it’s kind of a done deal.



A Few Real-Life Tips (So They Actually Turn Out Good)

  • Squeeze your zucchini. It matters more than you think

  • Dice strawberries small so things don’t get soggy

  • Don’t overmix

  • Let them cool… or don’t, we won’t judge


What to Do With the Rest of Your Box

This is a “keep it simple” kind of week:

  • Arugula + lettuce tossed with olive oil, lemon, and shaved parmesan

  • Chard + scallions sautéed together for an easy side

  • Summer squash sliced and roasted or thrown on a hot pan

  • Strawberries eaten immediately, realistically

It’s the kind of lineup that doesn’t need much to work.



Why This Kind of Box Works


Food that fits into real life. Some weeks that looks like throwing together a quick salad. Some weeks it looks like baking muffins because you can.


If you’re in Kingman, Flagstaff, or nearby areas, this is what access to local food should feel like. Not complicated. Not all or nothing. Just better, when you can.
