Kohlrabi Apple Slaw

SO GOOD! Eat it as a snack or top it with chicken for a lunch you'll look forward to.

Ingredients:

  • 1medium kohlrabi, peeled and julienned

  • 1large apple, juilienned

  • 1/2cup walnuts, chopped

  • 4large scallions, chopped

  • 2tablespoons apple cider vinegar

  • 1/4cup walnut oil

  • 3teaspoons maple syrup

  • Salt and pepper to taste

Directions:

  1. In a large bowl, mix together julienned kohlrabi and red apple pieces. Add walnuts and scallions.

  2. In a small bowl, whisk together apple cider vinegar, walnut oil, and maple syrup.

  3. Combine dressing with vegetables and toss. Season with salt and pepper to taste
