Parmesan is one of my absolute favorite cheeses for its nutty tart flavor. Add it to your zingy arugula and you'll be so pleased with your salad. Add in other toppings like beets and walnuts for extra flavor and texture.
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon honey (buy locally from Beezerk or Fort Rock Farms)
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 cups arugula
1/4 cup shaved Parmesan cheese
In a large bowl, whisk together the olive oil, lemon juice, honey, and salt and pepper. Add the arugula to the bowl and toss. Top with the shaved Parmesan and more pepper taste. Makes 4 cups.
