Thai Lemongrass Soup

Soothe your senses with some fragrant soup.


2 stalks lemongrass

1 tbsp olive oil, divided

2 garlic cloves

1 tsp grated ginger

4 c broth

1 tsp sambal oelek

2 c mushrooms

7 oz tofu

1/4 c cilantro

1 tbsp lime juice

soy sauce to taste


1. Bruise lemongrass stalks by pressing on them with a large knife. Cut each stalk into 4 sections.

2. Heat 2 tsp of oil over med heat. Add garlic and ginger and sauté for 1 min. Add broth, lemongrass, sambal oelek, and mushrooms (add cherry tomatoes for extra flavor). Bring to a simmer and cook for 15 min.

3. Brown cubed tofu in separate pan with oil (about 5 min each side). Add to broth mixture with cilantro and lime. Season with soy sauce. Discard lemongrass and serve.
